Why Coca-Cola Works in Pulled Pork
Full-sugar Coca‑Cola does three important things:
- The sugar caramelises → deep, rich flavour
- The acidity tenderises the pork
- The carbonation helps break down the meat fibres
Diet Coke or Zero won’t work the same, the sugar is essential here. You can substitute Pepsi if needed, but it must also be full sugar.

Method
- Place pork shoulder whole in the slow cooker.
- Add barbecue sauce, Coca-Cola, and liquid smoke.
- Mix to combine.
- Turn slow cooker onto medium high for 6 hours or low for 8-10 hours.
- Once cooked, meat will fall off the bone easily. Shred with the forks or tongs and mix through the sauce.
- Let sit for 20-30 minutes before serving as desired.
Notes
Oven Method
- Preheat oven to 150°C.
- Place everything into a deep roasting dish.
- Cover tightly with foil.
- Cook for 5–6 hours, until pull-apart tender.
- Shred and mix back through the sauce.
Lazy Flavour Upgrades (Optional but Elite)
This recipe is very forgiving, here’s how to tweak it depending on your vibe:
🔥 Smokier
- Add ½–1 tsp smoked paprika
- Increase liquid smoke slowly (brands vary wildly)
🍎 Tangier
- Add 1–2 tbsp apple cider vinegar
- Great if your BBQ sauce is very sweet
🍯 Sweeter & Stickier
- Add 1–2 tbsp brown sugar or honey
- Perfect for sliders
🌶 Spicy
- Add chilli flakes, chipotle powder, or hot BBQ sauce
