Lazy 3-Ingredient Coca-Cola Pulled Pork

Share the love!

There are nights where cooking from scratch feels like a personal attack and this is exactly why the Lazy Dinner Series exists.

This Coca-Cola pulled pork is rich, sticky, smoky, and embarrassingly easy. Dump everything in, walk away, and come back to meat that literally falls apart with a spoon. No browning. No babysitting. No guilt.

And yes, it must be full-sugar Coke. Trust me.

Why Coca-Cola Works in Pulled Pork

Full-sugar Coca‑Cola does three important things:

  • The sugar caramelises → deep, rich flavour
  • The acidity tenderises the pork
  • The carbonation helps break down the meat fibres

Diet Coke or Zero won’t work the same, the sugar is essential here. You can substitute Pepsi if needed, but it must also be full sugar.

Here’s the recipe below:

Lazy 3-Ingredient Coca-Cola Pulled Pork

A dump-and-go Coca-Cola pulled pork made with BBQ sauce and slow-cooked until fall-apart tender. Sweet, smoky, and perfect for buns, tacos, or bowls.
Prep Time 10 minutes
Cook Time 6 hours
Servings: 8
Course: Main Course
Cuisine: American

Ingredients

  • 2 kg pork shoulder
  • 2 cups barbecue sauce
  • 1 can coca-cola original (with sugar)
  • 1 tsp liquid smoke

Equipment

  • 1 Slow cooker
  • 1 Mixing spoon
  • 2 Forks or tongs for shredding

Method

  1. Place pork shoulder whole in the slow cooker.
  2. Add barbecue sauce, Coca-Cola, and liquid smoke.
  3. Mix to combine.
  4. Turn slow cooker onto medium high for 6 hours or low for 8-10 hours.
  5. Once cooked, meat will fall off the bone easily. Shred with the forks or tongs and mix through the sauce.
  6. Let sit for 20-30 minutes before serving as desired.

Notes

Tip: Add salt, pepper, and additional spices like smoked paprika, or a dash of vinegar for more of a tang!

Oven Method
  1. Preheat oven to 150°C.
  2. Place everything into a deep roasting dish.
  3. Cover tightly with foil.
  4. Cook for 5–6 hours, until pull-apart tender.
  5. Shred and mix back through the sauce.

Lazy Flavour Upgrades (Optional but Elite)

This recipe is very forgiving, here’s how to tweak it depending on your vibe:

🔥 Smokier

  • Add ½–1 tsp smoked paprika
  • Increase liquid smoke slowly (brands vary wildly)

🍎 Tangier

  • Add 1–2 tbsp apple cider vinegar
  • Great if your BBQ sauce is very sweet

🍯 Sweeter & Stickier

  • Add 1–2 tbsp brown sugar or honey
  • Perfect for sliders

🌶 Spicy

  • Add chilli flakes, chipotle powder, or hot BBQ sauce

🍅 BBQ Sauce Swaps

This works with:

  • Smoky BBQ
  • Honey BBQ
  • Bourbon BBQ
  • Maple BBQ

Honestly… whatever’s in the fridge.

How to Serve Coca-Cola Pulled Pork

  • Soft buns or brioche sliders
  • Tacos with slaw
  • Loaded baked potatoes
  • Loaded fries
  • Pulled pork nachos
  • Rice bowls with pickles & mayo

Leftovers freeze beautifully too.
