Some dinners just need to be simple.
This Slow Cooker Taco Chilli Mince is one of those recipes I keep coming back to because it uses pantry staples, minimal effort, and still tastes like proper comfort food.
It’s made with:
- 500g grass-fed beef mince
- 1 packet taco seasoning
- 1 can condensed tomato soup
- 1 can chilli beans
Everything gets slow cooked for several hours, then the beans are added toward the end so they stay perfectly textured.
It’s the kind of meal you can prep in the morning and come back to later feeling very organised (even if the rest of life isn’t).
Why This Recipe Works
This combination might sound simple but it works beautifully.
The tomato soup creates a smooth, slightly sweet base.
The taco seasoning brings instant depth and spice.
The beef mince becomes rich and savoury as it slow cooks.
And the chilli beans add warmth, texture, and body.
Together, they turn into a thick, spoonable chilli that’s perfect for loading onto nachos or serving over rice.
No complicated steps. No long ingredient lists. Just comfort.
Brands Used
For this version, I used:
- Wattie’s Condensed Tomato Soup
- Pam’s Taco Seasoning Mix
- Pam’s Chilli Beans (you can also use Wattie’s)
- Grass-fed beef mince
I love using supermarket staples like these because they’re affordable, easy to find in New Zealand, and make weeknight cooking realistic for busy families. If these aren’t available to you, you can use any brands.

Lazy 4 Ingredient Beef Chilli
Ingredients
Equipment
Method
- Heat a pan and brown the beef mince until fully cooked. Break it up well so it’s nice and fine.
- Transfer the cooked mince into your slow cooker.
- Add taco seasoning and condensed soup. Mix until combined.
- Cook on low for 5 hours or High for 4 hours.
- Add chilli beans in the last 30 minutes of cooking.
- Stir well and serve hot over rice, corn chips, or even baked potatoes.
- Top with guacamole, sour cream, cheese, coriander, or whatever your heart says yes to.
Notes
- Browning the mince properly = deeper flavour (don’t rush this step)
- If it tastes too sweet → add a splash of vinegar or lime
- If it feels flat → chilli flakes or hot sauce bring it alive instantly
- Leaving the lid slightly ajar for the last 15 mins helps thicken it for nachos
- Brown mince
- Add all ingredients and mix until combined.
- Simmer for 30 minutes stirring frequently to avoid sticking.
- Serve.
- Loaded nachos night
- Easy rice bowls for busy evenings
- Meal prep lunches (it reheats beautifully)
- Jacket potato filling
- Freezer-friendly batch cooking
Why I’m Loving Lazy Dinner Recipes
Life is busy. Especially with kids, work, and everything else happening at once. I love cooking from scratch and most of the time I do but I’m human and sometimes I just don’t have it in me.
Recipes like this are about making dinner feel manageable without sacrificing flavour.
It’s not about being fancy, it’s about feeding your family well in a way that feels sustainable.
That’s the heart of this series.
