Method
- Peel garlic cloves and lightly crush or slice each one in half.
- Slice ginger root with the skin on.
- Place garlic, ginger, and cloves inside a clean mason jar.
- Pour raw honey over until fully submerged and stir to release air bubbles.
- Place lid on loosely and store in a cool dark place. It will be ready in about 1 week and will continue to ferment and deepen with time.

Fermentation Notes
- Stir or turn daily for the first week.
- Bubbles are normal.
- After 3–4 weeks the honey thins and garlic mellows.
- If stored correctly it can keep for up to one year.
- To top up simply add more fresh raw honey, garlic, ginger, cloves, and any immune supporting herbs you prefer such as oregano and thyme.
- 1 teaspoon daily for immune support
- 3 teaspoons daily for coughs and viruses
- Stir into warm (not hot) water as a tea
- Use in dressings or marinades
