Method
- Mix butter, sugar and vanilla on low until combined, add egg and beat on medium - high for 5-8 minutes until pale and creamy.
- Add flour and baking powder and mix on low until combined into a soft dough. Add cranberries and chocolate chips and mix until evenly throughout dough.
- Roll into large balls and put 6 cm apart on a baking sheet lined with paper. Mixture makes 6-7 balls I use two baking sheets with 3-4 cookies on each)
- Bake at 180° for 16-18 mins - leave on tray to cool for 10 mins and then devour!
- Keep in an airtight container for up to 5 days - but they wont last that long!
Notes
Tips: You can use a regular chocolate block crunched up also, and feel free to mix and match or swap out chocolate types.
