Method
- Add water, sugar, and pineapple skins + core to a large pot stir until sugar is dissolved and bring to the boil for 10 minutes.
- Turn off stove and let steep until cooled.
- Fill the two 1L glass bottles with the pineapple tea/liquid leaving room for 1/4 cup ginger bug for each.
- Strain and pour 1/4 ginger bug into each bottle leaving room at the top for pressure to build. Seal with lids and let sit for 24-48 hours until desired fermentation and fizziness is reached then refrigerate.
- Once chilled serve and enjoy!
Notes
Tips:
1-2 Cups of sugar depending on sweetness. If you prefer a drier soda then use 1 cup of sugar or 2 for a sweeter soda.
You can also change the flavour of your soda by using different fruits such as:
- Apple or apple skins
- Pears
- Mango
- Berries (strawberries, raspberries, blueberries)
- Peach or nectarine
- Citrus (lemon, lime, orange peel and juice)
- Grapes
